I see many average starting salaries calculated by NACE. Do these included benefits such as days off? Do they take the value of the days off and add it to the number? Same with things like retirement and insurance?

No. Companies typically don’t list how much your benefit package is worth, although it’s not a secret or hidden. If the salary is k, the benefits aren’t included.
